Decadent Hot Cocoa

One quick, surefire way to sink into the warm holiday spirit is to enjoy a cup of hot cocoa by the fireplace. At LYB, we like to do things a tiny bit different, so while we are all for fast and easy instant mixes, we also are big on healthier, more wholesome alternatives.

This version of hot cocoa is super easy and beyond decadent. It is also 100% keto and vegan! We love this recipe so much, we considered giving it its own blog post (before we came across the Brownie Batter Overnight Oats). Thank you, Deliciously Ella, for the inspiration!

Ingredients (serves 1)

1 cup of coconut milk (or milk of choice)

1 tablespoon of almond butter

2 tablespoons of cacao powder

1 tsp of vanilla extract

Stevia to taste or 3 dates if not keto

Instructions

Place all ingredients in blender and blend until smooth frothy. Pour into a saucepan and heat until desire warmth is reached.

Brownie Batter Overnight Oats

I love mornings, especially when my home is full of loved ones who appear in the kitchen as they wake up. I don’t, however, love waiting for everyone to join to make breakfast. I am usually hungry for something first thing in the morning, but I don’t want to make pancakes or a breakfast casserole until the majority of the family is ready to enjoy them. These overnight oats might just be the solution! The recipe below serves one, but last weekend I halved the amounts, placed them in short drinking glasses, and feel they will be the perfect “starter” to tide us over until the breakfast meal.

Ingredients (serves 1, I will half it)

1/2 cup rolled oats

1 1/2 tbsp cocoa powder

1/8 tsp salt

1 tbsp nut butter, optional (I like it with almond butter)

1 cup milk of choice

2-4 tsp chocolate chips or mini chocolate chips

Sweetener of choice, to taste

Instructions

Stir together the first three ingredients in a mason jar or lidded container. Top with the remaining ingredients, then seal the lid tightly. Shake to evenly combine all ingredients. Transfer to the fridge, and let sit overnight. The next day, simply take off the lid and breakfast is ready! (If you’d prefer, you can also heat it up at this time.) Sweeten as desired, either before or after letting it sit.
